It started with the basement flood on New Years. It has continued it's wrath with this and that and then when I thought we were in the clear.... it struck again.
The only part of our basement that didn't flood from the water heater was the bathroom.
Til now.
Of course we didn't discover it for who-knows-how-long
and when we did it was a Friday afternoon.
I'll spare you all the smelly details,
but we will certainly be calling the plumber first thing Monday morning.
Oh, and I'll also have a great, new post on bathroom flooring coming soon! :)
I promise I am not whining.
We're past that. It's now a full blown comedy!
I'm taking it all in stride.
Hunkering down focusing on eating healthy and working out and hopefully our luck will turn soon.
I am half Irish- maybe St. Patty's day will bring us luck.

Oh I am sad for you with all the stuff going awry. It must stop now and just turn right around. Good Luck from now on! I am making a soup that you might like, it is supposed to be Italian, but with me it ends up just poverty Amercian... grin. My theory is... if you don't have it already, just don't put it in or replace with another veggie, or spice or even meat. It is VERY hearty and inexpensive and it makes a lot.
ReplyDeleteSausage Lentil Soup
1 lb Italian sausage (or Italian turkey or Turkey Smoked sausage)
1 T olive oil
1 slice ham or 2 of pancetta
1 large onions, chopped
2 stalks celery, ch
2 large carrots, ch
1 small potato finely ch
1 C chopped cabbage
1 small zucchini, ch
8 cups chicken broth
2 (14 1/2 ounce) cans diced tomatoes, undrained
2 -3 garlic cloves
1 teaspoon salt (I wait to salt to taste)
1 1/2 C dry lentils
black pepper
1 t red pepper flakes or hot sauce
1 t basil
1 t oregano
1 t parsley or cilantro
hand full of fresh spinach finely sliced
1/2 t thyme
red wine vinegar to taste
Parmesan to serve
Brown sausage if using fresh uncooked; drain off fat.
In a large pot combine all ingredients bring to boil.
Reduce heat,cover.
Plan to simmer for at least 1 hour or till lentils are tender. MIGHT need a couple more hours, depending on your lentils.
Add water or broth if necessary for desired consistency.
Add a touch of red wine vinegar and then sprinkle with Parmesan cheese and serve.
These energy bites are great for taming my sweet tooth and still getting some healthy foods in. I hope March brings lots of luck for yall to make up for that awful flood!
